Harry’s Eggplant Recipe:
Ingredients:
1 Eggplant
1 tablespoons cornstarch
1 tablespoon vegetable oil
1 tablespoon garlic
1 tablespoon ginger
1/4 cup soy sauce
1 tablespoon sriracha
1 tablespoon lime juice
1/4 cup maple syrup
1 spring onion, roughly chopped
Instructions:
1. Preheat oven at 200 degrees Celsius.
2. Slice the eggplant horizontally but don’t cut all the way through. Turn the eggplant over and cut at a 45 degree angle.
3. Coat the eggplant in cornstarch and drizzle with oil. Bake in oven for 15 minutes or until crispy on outside and tender in the middle.
4. In a small pot over medium heat, combine garlic, ginger, soy sauce, sriracha, lime juice and maple syrup until simmering.
5. To plate, arrange eggplant in a ring shape and generously drizzle with the sauce.
6. Garnish with chopped spring onion.
