Focaccia Buns!

If we haven’t convinced you to try focaccia yet, especially if you’re a beginner to bread making, perhaps this will. This is the EASIEST sandwich to make, which is oh so tasty and satisfying.



INGREDIENTS
500g all-purpose flour or bread flour
10g salt kosher salt
8g dried yeast
470ml lukewarm water
4 tablespoons olive oil, divided
Flaky sea salt, such as Maldon
Herbs of your choice (fresh rosemary, oregano, thyme)

INSTRUCTIONS
1. Make the dough: In a large bowl, sieve together the flour, salt, and yeast then add the water and use a rubber spatula to create the sticky dough ball.
2. Rub the surface of a clean bowl with oil, place the dough inside and rub lightly with olive oil.
3. Cover the bowl with plastic wrap and place in the refrigerator immediately for at least 12 hours.
4. Grease individual ramekins with olive oil.
5. Split the dough into 100g balls and place into the individual ramekins, cover with a clean tea towel or glad wrap and let proof for 1 hour (The dough should double with each proof).
6. Stretch each individual dough as wide as you can and fold each corner into the centre, place back into the lined tray, cover and let proof for another 30 minutes - 1 hour.
7. Preheat the oven to 200ºC
8. Pour the remaining olive oil over your dough and use your fingers to press straight down to create dimples. Then season with salt and herbs of your choice.
10. Transfer to the oven immediately and bake for 18-20 minutes or until golden all around. Remove the focaccia buns from the oven and place on cooling racks.
11. Let cool for 20 minutes before cutting into and creating your own sandwich!
